Let the dough rest for a few minutes and then roll again if you find that the dough is shrinking back. With a 3-inch biscuit cutter or the top round of a drinking glass. Cut 6-8 round shapes from the dough. Place on prepared sheet pan 2 inches apart. With fingers, Press each round back out to the original 3-inch circle. With the tines of a fork, poke holes over the dough rounds. Evenly spread 1 teaspoon of sauce over each dough round. Sprinkle lightly with shredded cheese (about a tablespoon per pizza); set aside.
Cut slices of cheese into ¼ – inch strips; set aside. For each of the olives, cut about a ¼ of the bottom of each to make a flat side. Discard the ¼ inch pieces.
Place strips of cheese over round horizontally to make the face of a mummy (leaving a space for eyes). Place 2 olives, flat-side-down for eyes on each pizza.
Now that you have the mummy faces set; remove the strips of cheese and set aside in refrigerator to use later (these will be placed on pizzas once the come out of the oven). Press down on the green olive eyes firmly to be sure they are embedded into the dough.
Bake pizzas in preheated 425°F for 10-12 minutes or until golden brown. Remove from oven. While still on the baking sheet and hot, carefully arrange cheese slices over hot pizzas to look like mummies. Be very careful as the pizzas are hot! Do not worry if the slices are a bit longer than the pizza. The cheese slices will slowly melt and fold over the sides.
